BM # 30   Week 1   Day 1

This is the first week of BM # 30, for this week I have chosen from a list of combos that Valli gave us.The list had about 15 combos and we had to choose only three.Simple! Right, but I already had 6 recipes done from that list.I was keen to take up all south recipes but unfortunately my MIL fell sick and it was difficult to work on all three new recipes for the first week. Puttu was my first choice but on discussing with Padma I realized a special puttu flour should be used.I could have gone to check on the Kerala store, but with things not so good at home, could not manage.

My next choice was these vadas. These seemed different from the ones we make .With all the daals in there a complete protein packed bite. These are traditional vadas are from Tamil Nadu.I served these with two chutneys.


½ cup bengal gram daal
½ cup split green gram
½ cup split black gram 
½ cup raw rice 
¼ cup grated coconut 
2-3 whole red chillies 
Salt to taste 

Tempering

1 tsp oil
1 tsp mustard seeds
Few curry leaves
Wash and soak the daals and rice for 2-3 hours.
Grind to a coarse paste adding the salt and red chillies.
Heat oil and temper this mixture with mustard seeds and curry leaves.
Mix well and deep fry like fritters or pakoras.
Serve hot with coconut chutney.

Coconut chutney

1 cup grated coconut
2-3 green chillies
Small bunch coriander
Salt to taste
Lemon juice
Blend all the ingredients to a paste.
I like the chutney to be coarse, but you could make it fine too. 


Tomato Chutney

1 tsp oil
1 tsp cumin seed
4 -5 cloves garlic
1/2 tsp ginger
1 tbsp onion
1 tsp udad daal
3-4 red chillies
2 tbsp channa daal
3-4 tomatoes
salt to taste
Heat oil.
Add cumin seed, garlic , ginger ,udad daal and onion and saute.
Add red chillies and channa daal.
Saute’ .
Add tomatoes and cook, till soft.
Cool and grind to a paste.

This was a new recipe for us and fortunately I had my daughter’s in laws coming over who are from Chennai.They loved these hot vadas and appreciated them for their flavor and crunchiness. I made a dosa from the same batter for my hubby and he really enjoyed it.The little specks of red chilly and mustard  made the vadas beautiful.

  1. Wow Vaishali, I am loving the entire plate!..the vadas look so yummy…this made me realize that we do make this but call it differently.. I should have checked it myself. Anyway so good that you made it.
