Gluten Free Pearl Millet Crackers

Pearl millet garlic crackers are crackers made with bajra and flavoured with fresh green garlic . These are gluten free crackers.

Gluten is a General name for proteins found in wheat and by products of wheat . Gluten helps food to maintain their shape , acting as a glue .

We hear so much about Gluten allergies , but it’s very recently that the nutritionist suggest a Gluten Free diet to remain healthy . To be truthful I never bothered about gluten , but two years back I met a nutritionist who explained me that it is important for us to eat a gluten free diet in order to remain healthy .

When we look at gluten free grains , we have an abundant variety which include corn , sorghum , wild rice , teff , buckwheat , quinoa , amaranth , millet , rice . So if one goes on a gluten free diet there’s a lot to eat .

I made these bajra crackers with fresh green garlic and they turned out awesome . I added some ghee to these , which gave them a unique flavor.

Pearl Millet Garlic Crackers

Ingredients

1 cup pearl millet flour / bajra flour
1/4 cup fresh green garlic
1 green chili
Handful coriander leaves
3 tbsp ghee
1 tbsp sesame seeds
Salt to taste

Method

Using a blender make a paste of garlic , chili and coriander leaves . Add salt while making the paste.
In a mixing bowl add the flour and rub in the ghee .
Add the green garlic paste , sesame seeds and using warm water bind the dough .
Knead the dough for a few minutes so it becomes pliable .
Make 4 balls from the dough , roll each ball to 1/4” thickness .
Cut into desired shape . Prick with a fork so that they do not puff up .
Preheat the oven at 180 deg C for 10 mins. Meanwhile arrange the crackers on a baking tray lined with butter paper.
Bake the crackers for about 15-20 mins. Keep an eye after 15 mins.
Once out of the oven, the crackers are soft, when cooled down they become crispy.
