Baking Around the World, yes, this is what I am going to do for the coming 30 days. Throughout April, you shall see bakes on this space. Bakes from different  countries, preferably traditional and popular ones. Well besides that, we shall go alphabetically . We shall begin with A and finish with Z, taking Sunday’s off.

We have been doing these Mega Marathons over a couple of years and I am totally addicted to them. Last April it was A to Z with Fire up your Oven theme. I realize that it is challenging to do mega marathons but one gets to learn a lot. We have two mega marathons every year in April and September of course besides our regular marathons.Thanks to Srivalli for organizing these events.

With Baking as the main theme, I have decided to bake All Cakes .I  have always been fond of cakes, in fact we all enjoy cakes at home, it is just that everyone wants to cut down the calories all the time. When I started baking these cakes , at times I baked two in one go. This made it easy as the basic cake ingredients are more or less the same . Also if there were two cakes at a time my family members tasted one and then automatically got tempted to try the second one.This is the first time I realized that the two cakes finished faster than one.

For the very first day I have a cake from Albania. On my search for this alphabet I got plenty of Apple  Cakes,  but I have already posted these. Next I tried a Armenian Cake , which somehow was over sugary and buttery. The Flavors were awesome but I did not want to post a cake which was not appreciated by my family. Search results finally found this Albanian Cake.


I was not sure if the cake was authentic as I could not find much information on this , but check what wiki has to say.

‘Albanian desserts originate from either Turkey or Greece and are popular all over the Balkans. These dishes are inspired from both Western and Eastern civilizations. The desserts that are entirely Albanian consist of local fruits, which are used both for compotes and for various types of cakes or pies. Albanian Walnut Cake with Lemon Glaze is a good example in this case. Citrus fruits, such as oranges and lemons are used in many of the Albanian desserts. ‘

This made me sure that this is authentic. The cake is full of walnuts and the Lemon glaze is to die for. It really enhances the flavor of the cake, please do not skip it, just in case you think of it. A wonderful, delicious cake which would get over in a jiffy.

 

Albanian walnut Cake with Lemon Glaze

 

Ingredients

1/2 cup butter / oil
3/4 cup sugar
2 tbsp flax seed powder + 6 tbsp water
1/3 cup yogurt
1/3 cup buttermilk
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tbsp lemon zest
1 cup walnuts, roasted and finely chopped

Method

Preheat oven to 180 degrees C.
Cream together sugar butter / oil.
Add flax seed mix.
Blend yogurt and buttermilk.
Sift flour, baking powder, baking soda.
Add the yogurt mix and the sugar mix alternatively to the flour.
Stir in the lemon zest and walnuts.
Pour batter in a greased and lined baking tin.
Bake for 39 – 40 minutes or till a skewer comes out clean.
When the cake is done, poke holes with a skewer all over the cake.
Pour the glaze and return to the oven for 10 minutes.

Lemon Glaze

3/4 cup water
1 cup sugar
1/4 cup lemon juice
Make the glaze by simmering all ingredients.

This is a moist cake from Albania and the Lemon Glaze is the highlight of the cake.

Instructions
  1. Preheat oven to 180 degree C.
  2. Cream together butter, sugar, till light and frothy.
  3. Add the dissolved flax seed powder.
  4. Blend in yogurt and buttermilk.
  5. Sift all dry ingredients and add them to the prepared mix.
  6. Stir in the lemon zest and walnuts.
  7. Pour the batter in a lined and greased baking tin.
  8. Bake for 30-40 minutes or until a tooth pick comes out clean.
  9. Make the glaze by simmering in all ingredients under Lemon Glaze.
  10. When the cake is done, pour the lemon glaze over the hot cake and return to the oven for 10 minutes.
  11. Let the cake cool a little before cutting it.
