Achaari Paneer Pulao
Achaari Paneer Pulao is a very flavourful Pulao which is a one pot meal with mild pickle flavour and chunks of marinated and grilled paneer cubes.

Instructions
Rice
  1. Soak the saffron in milk .
  2. Wash the rice till the water is clear .
  3. Soak it for 20 – 30 minutes .
  4. Boil 6 cups water in a pot .
  5. Add salt and a tsp of oil .
  6. When the water comes to a boil add the rice .
  7. Let the rice cook till completely done .
  8. Drain excess water and let them cool .
  9. Once the rice is cool add the soaked saffron and mix the rice .
  10. Keep aside .
Paste
  1. Except cottage cheese blend all ingredients under paste to a smooth mixture .
  2. Marinade the cottage cheese cubes with half of this paste for at least 20 minutes .
  3. After 20 minutes grill the paneer cubes in an oven or on charcoal till golden .
Making the Pulao
  1. Heat a pan .
  2. Add ghee to it .
  3. Add bay leaf , cloves , cinnamon , cardamom .
  4. Add the rest of the Achaari Paste .
  5. Add the boiled green peas . Sauté for a minute or two .
  6. Add the saffron coated rice and the grilled Paneer cubes .
  7. Mix well and serve garnished with mint and kasoori methi .
