Aloo ja Masale wara Karela are stuffed bitter gourds with potatoes , these potatoes are seasoned with pickle spices . They make a wonderful side dish.

Ingredients
Stuffing
Instructions
Karela
  1. Peel the skin of Karelas and make a slit .
  2. Wash and marinate them with salt , yogurt and wheat flour for about an hour .
  3. After one hour wash and squeeze them .
  4. Heat oil and deep fry the whole karelas to a light pink .
  5. Remove after frying and keep aside .
Stuffing
  1. Heat a pan with a tbsp of oil .
  2. Add the seed mix and let splutter .
  3. Add turmeric and immediately add the boiled , mashed potatoes .
  4. Add red chili powder , mango powder , salt, mango pickle and finally coriander leaves .
  5. Mix well and switch off the flame .
Getting the karelas ready
  1. Using a spoon scoop out the seeds from the gourds .
  2. Fill in the prepared stuffing .
  3. Heat a non stick pan , drizzle a little oil and place the stuffed Karelas .
  4. Cook covered on slow flame for about 10 minutes , tossing gently once in a while .
  5. The Karelas should be slightly golden .
