Banarasi Dum Aloo
Banarasi Dum Aloo is a potato curry made with baby potatoes which are simmered in a rich gravy . The curry is from Banarasi kitchen .

Other ingredients
  1. Wash and dry the baby potatoes .
  2. Pierce each potato with a fork all around . .
  3. Sprinkle salt and keep aside for 10 – 15 minutes.
  4. Deep fry till golden and cooked through .
  5. Drain on a kitchen paper and keep aside .
  6. Alternatively to avoid calories , boil the potatoes , prick and apply salt .
  7. Brush lightly with oil and use a air fryer to make them crisp .
  1. Combine all ingredients together and simmer over a medium flame till tomatoes are cooked .
  2. Cook the mixture and purée in a blender to a smooth paste.
How to serve
  1. Heat butter and oil , add cardamom and gravy paste and allow it to come to a boil .
  2. Simmer till the oil separates.
  3. Add the potatoes , kasoori methi , salt and honey and simmer for 5 minutes .
  4. Garnish with cream and coriander .
