Vegetable Biryani Cake
A Protein Rich layered Biryani, which is compressed to make a cake.

Spinach layer
Tomato layer
  1. Wash and soak the rice for 15 minutes .
  2. Drain all the water.
  3. Heat oil in a heavy bottom pan.
  4. Add all Whole spices , sauté for a few seconds .
  5. Add the drained rice and roast till there’s no moisture . Be careful not to break the rice .
  6. Add milk, water and salt .
  7. Let the rice cook on full flame till 80% rice is cooked.
  8. At this point there should be some water too.
  9. Simmer the gas , cover the rice and keep some heavy object on the lid . I normally keep by brass mortar and pestle.
  10. Once the rice is done keep covered.
Spinach Layer
  1. Heat 1 tbsp oil and sauté the onions till pink.
  2. Add ginger garlic paste. Sauté again.
  3. Add blanched, puréed spinach.
  4. Add all spices and sauté for 2 minutes.
  5. Add milk to get it to pasty consistency.
  6. Add boiled peas and cubed paneer.
  7. Add more milk and cook for another 2 minutes.
Tomato Layer
  1. Heat oil.
  2. Add onion and capsicum and sauté for a minute.
  3. Add ginger garlic paste.
  4. Toss for a minute and add chopped tomatoes , cook till mushy.
  5. Add red chilly powder , turmeric powder , Biryani masala and salt.
  6. Mix well and add the tomato purée .
  7. Add the chopped boiled carrot and boiled French beans.
  8. Mix well and keep aside.
Assembling the cake
  1. Take a round steel container .
  2. Grease it well on sides and bottom.
  3. Arrange cherry tomatoes and boiled broccoli flowers in a decorative pattern .
  4. Spread a layer of rice.
  5. Press this layer with the help of either a greased steel bowl or a lid .
  6. Sprinkle some fried onions.
  7. Spread the prepared spinach layer.
  8. Now spread another layer of rice , pressing with a bowl in a similar manner.
  9. Next layer the rice with tomato layer.
  10. Again sprinkle fried onions.
  11. The last layer is of rice .
  12. Press the rice again .Since the rice is hot pressing will compress them and they will stick .
  13. After this close the lid of the container .
  14. After a while invert the container upside down on your serving plate.
  15. Garnish with roasted seeds, nuts , beans and cherry tomatoes.
  16. Enjoy the Biryani with curd.
