Black Forest Cake is one of the first cakes I learnt after getting married . I remember we didn’t have an oven and our neighbors had a round electric oven . I made the batter and went to their house to bake . Those ovens were portable , but yet I had gone to bake . And this was 40 years back ! Later of course we bought an oven and I used to bake cakes for the kids birthday parties .
With time everything changes . Now I have a huge oven and my friends come over to bake as they can bake loads at one go , but no more kids birthday parties . Anyway this cake was baked for a friend and she loved it .
Black Forest cake is the English name for the German dessert Schwarzwälder Kirschtorte. The Cake consists of several layers of chocolate sponge cake , though I just slit it into two and sandwiched with whipped cream and cherries. The cake is normally decorated with additional whipped cream, maraschino cherries, and chocolate shavings. I like to cook my cherries with some sugar ,syrup from cherries and cornflour for the filling , but I went with the traditional topping of whipped cream and chocolate shavings.
Black Forest Cake
1 chocolate cake recipe
1 tbsp sugar
1 tbsp corn flour
Remove the pits from cherries and strain the juice from the tin .
Reserve about 1/4 cup and place the rest of the juice in a thick bottomed pan .
Add half the pitted cherries .
Dissolve the corn flour in a bowl , you could use the juice of cherries .
Gradually add this conflour mixture to the cherry mix .
Stir continuously till the mixture turns thick and translucent.
Remove from fire .
Let it come to room temperature before using .
Assembling the Cake
Divide the cake into two .
Using a spoon or a spray bottle sprinkle the reserved cherry syrup on both sides of the cake .
Apply a layer of whipped cream .
Spread the cherry sauce.
Cover the cake with the second half .
Apply whipped cream on the top and decorate with grated chocolate and cherries .
