When we talk of Frozen treats the first thing that comes to my mind is popsicles , but the popsicles I like are water based , and this time I wanted to add an element of health to the popsicles .

I decided to make coconut water popsicles for the Day 1 , Week 1 of BM # 78 under the theme Frozen Foods.

We all know the benefits of coconut water , but simple coconut water would taste so bland in popsicles , so I made a light lemonade with coconut water with some pomegranate pearls in it .These popsicles are absolutely guilt free , so go ahead enjoy them .

Coconut Lemonade Popsicles

Ingredients

1 glass fresh coconut water
2 tsp sugar
1 tsp lemon juice
Few pomegranate pearls

Method

Dissolve sugar in coconut water .
Add lemon juice .
Pour into popsicle moulds .
Add some pomegranate pearls .
Place in the freezer , after 30 mins once it has started setting , insert the ice cream stick .
Put back in the freezer till well frozen .

Instructions

  • Dissolve sugar in coconut water .

  • Pour into popsicle moulds .
  • Add some pomegranate pearls .
  • Place in the freezer , after 30 mins once it has started setting , insert the ice cream stick .
  • Put back in the freezer till well frozen .
