4th of September is a special day in my life.Special days are generally celebrated with cakes and since a cake fitted in my baking theme for the first week , I was so glad. Well today is dad’s birthday.He is physically not with us any more, but yet I can feel his presence and this cake is a ode to him.God Bless his soul.
This is a vanilla based cake and its filled with orange segments and orange squash.Since we are not vanilla fans, I decided to frost it with coffee.The combination is truly mind blowing.

I garnished the cake with candied orange , which tasted awesome.

Basic Vanilla Cake
140 gms all purpose flour
1 tsp baking powder
1/2 tsp baking soda
60 ml butter or oil
200 ml condensed milk
1 tsp vanilla essence
Seive the flour,baking powder and baking soda.
Mix condensed milk,butter, vanilla essence and 75 ml water and beat.
Add the flour and beat well.
Bake in a preheated oven at 200 deg for the first 10 minutes and then reduce the temperature to 150 deg and bake for another 10 minutes.
Check with a toothpick, it should come out clean.
Invert on a wire rack to cool.

Soaking Syrup
2 tbsp orange squash, diluted with water 

Filling
3/4 cup peeled and chopped orange segments
2 tb sp orange rind
1/4 cup whipped cream
Mix the chopped orange segments to the cream.
Add the rind .

Frosting
1 3/4 cups whipped cream
2 tb sp coffee powder (one can adjust this according to one’s taste)
While whipping the cream add the coffee powder and mix well.
The cream that I used was already sweet, how ever if your cream is not sweet you could add icing sugar.

Assembling the Cake
Slice the cake horizontally into two.
Sprinkle the soaking syrup on both the sides.
Spread the filling.
Sandwich the cake with the top piece.
Frost the cake with the coffee frosting.
Garnish with candied oranges and mint leaves.

Candied Oranges
1 orange, sliced
1 1/2 cups water
1/2 cup sugar
Boil water and sugar, let boil for a 2-3 minutes.
Add the slices.
Let cook till the liquid reaches a thick syrup consistency and the oranges are translucent.
Let cool.
Remove them on a waxed paper and let dry.
The sugar syrup can be used to flavor some puddings or desserts.

  3. My wishes to Dad wherever he is! This is great way to celebrate a birthday. I love this cake and the fillings and the frosting. Has me drooling.Its so beautiful love the orange plates too.
    Wish i could get a slice of it. 😀
