Dundee Cake is my choice for the alphabet D for A -Z Baking around the World. This is a traditional fruit cake from Scotland.
This cake was originated in the 19th century by a company called Keiller’s Marmalade. The cake is made with currants, sultanas, almonds and fruit peel. The top of the cake is always decorated with almonds which make it look very pretty besides marking it specifically as a Dundee cake. It is a perfect tea time cake and an instant party hit.
I was surprised that this cake disappeared very fast , the fruit peel gives the cake a very very delicious flavor, a flavor which is so very pleasing . Like a kid I wanted to dig out all the fruit peels and enjoy. My sis in law who hardly eats cakes was looking for it after two days , not knowing the cake was gone long back. For the first time she said, you should make such cakes only. In return I could only smile. Deep down I thought if I work on the same cake again and again, how will I be able to finish this marathon. Anyway I will definitely come back with a new cake tomorrow for the alphabet Ę, till then enjoy this delicious Dundee Cake.
Dundee Cake
Ingredients
11/2 cups all purpose flour
2 tbsp butter
3/4 cups sugar
1/2 cup oil
1 cup mixed fruit ( currants, raisins, candied peel )
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla essence
2/3 cup milk
30 blanched almonds ( I had these chopped almonds from Costco that I used )
( to blanch almonds , place them in hot water for a couple of minutes, peel and cut them into halves)
Method
Beat sugar, oil and butter till creamy.
Add milk and vanilla essence.
Sift flour, baking powder, baking soda.
Mix the dry ingredients to the wet ingredients.
Add the mixed fruit and mix well.
Pour into a greased, lined cake tin.
Decorate with almonds.
Bake at 180 deg for 35-40 minutes or till done.
D - Dundee Cake
Ingredients

- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla essence
- 2/3 cup milk
- 30 pieces almonds blanched
Instructions
- Beat sugar, oil and butter till creamy.
- Add milk and vanilla essence.
- Sift flour, baking powder, baking soda.
- Mix the dry ingredients to the wet ingredients.
- Add the mixed fruit and mix well.
- Decorate with almonds.
- Bake at 180 deg for 35-40 minutes or till done.

I think every blogger encounters the same dialogue from family and friends that they should be making the same stuff over and over. I wonder when they will understand that it doesn’t work that way 🙂

The decoration is looking lovely with a nice color contrast. I loved the brown cake and the cream almond toppings. But dont feel like cutting it 🙂
