D – Dahi Wada Aloo Dum
Dahi Wada Aloo Dum is a street food from Orissa. The dish has a combination of three dishes and the final dish prepared has a medley of flavors.

Dahi Wada
  1. Whisk the curd well .
  2. Add a little water to adjust the consistency.
  3. Add salt , black salt, roasted cumin powder and mix well .
  4. Temper the curd with mustard seeds and curry leaves .
  5. Add the prepared Dahi wadas.
  1. Wash and soak both the peas for 4-6 hours.
  2. Pressure cook these with salt and turmeric for 2 whistles or till boiled , do not over cook .
  3. Heat 1 tsp of oil .
  4. Add mustard seeds, let splutter .
  5. Add asafoetida and immediately add the ginger garlic paste.
  6. Add the dry spices and the boiled peas .
  7. Let this boil for a few minutes and then simmer for 5 minutes.
Aloo Dum
  1. Peel the potatoes and prick them lightly .
  2. Boil the potatoes with salt and turmeric powder.
  3. Once the potatoes are cooked drain the water and keep them aside.
  4. Heat 2 tbsp oil.
  5. Add mustard seeds , asafoetida and whole red chilly .
  6. Add onions , ginger garlic paste and green chilly .
  7. Sauté onions till light pink and add tomatoes .
  8. Cook till mushy .
  9. Add the dry spices and boiled potatoes .
  10. Mix well and add water to make the gravy .
  11. Make sure you do not make the gravy very runny , it should be on the thicker side .
Assembling the dish
  1. Taking a flat serving bowl , place 2 Dahi wadas .
  2. Sprinkle the spice powder, roasted cumin powder and red chilly powder .
  3. Now pour a ladleful of ghughni on the side and sprinkle black salt .
  4. Next spoon out a ladleful of Aloo Dum next to Dahi Wada and ghughni .
  5. Sprinkle onions , gram flour vermicelli, coriander leaves and finally some spice mix .
  6. Enjoy the mixed flavors .
