Dry Fruit Kachori
Dry Fruit Kachori is a round kachori stuffed  with dry ingredients like ganthia, papadi along with nuts and spices . This kachori is a speciality of Jamnagar , which is a famous city of Gujrat.

Crust
  1. Sieve the flour .
  2. Add salt to taste , pinch baking powder.
  3. Add oil and rub the flour well .
  4. Bind the dough with lukewarm water .
  5. The dough should be stiff .
Stuffing
  1. Pulse the ganthia to make a coarse powder .
  2. This should be done in short burst , else the oil will separate.
  3. Now add all other ingredients , including oil to the blender and blend to a powder .
  4. Mix this powder with the ganthia powder .
  5. Add cashews , raisins , sesame seeds and fennel seeds .
  6. Mix well and form small balls .
Assembling the Kachori
  1. Knead the dough once again to make it pliable .
  2. Pinch out balls from it .
  3. Roll into a small disc .
  4. Place the stuffing ball and bring the edges together to seal .
  5. Remove all the extra dough from top .
  6. Prepare all kachoris in the same way .
Frying the Kachori
  1. Heat oil .
  2. Now switch off the flame for 2 minutes .
  3. Add a bit of dough to check if it rises .
  4. If it rises , switch on the gas and keep it on medium flame .
  5. Now start adding the kachoris , 5-6 at a time .
  6. Fry the kachoris on slow to medium flame stirring often for a even golden color .
  7. Remove with a slotted spoon over a kitchen napkin .
  8. Let cool to store in a airtight container .
