Elimuccai Paratha
Elimuccai Paratha is a lemon paratha .interesting, delicious and totally yummy paratha from Parathe wali Gali of Chandni Chowk .

  1. Method
  1. Take the flour in a mixing bowl .
  2. Add water gradually and bind the dough .
  3. Cover and keep aside for 15 minutes .
  1. Dry roast the cumin and coriander seeds and pulse coarsely .
  2. Remove and keep aside .
  3. Take rest of the ingredients and pulse them to a coarse mixture .
  4. Combine the cumin and coriander mix and salt .
How to make paratha
  1. Divide the dough into two balls .
  2. Heat ghee in a shallow kadai / pan .
  3. Take one ball and roll it into a 2-3” disc.
  4. Divide the stuffing into two and place the stuffing in the centre of the disc .
  5. Bring the edges together and seal them .
  6. Gently flatten the ball with your palms .
  7. Roll into a 6” disc .
  8. Gently slide the parathas in the hot ghee .
  9. Now simmer the gas and press the paratha so that it doesn’t puff up .
  10. Flip over and increase the flame for a minute . Again simmer till the paratha is nice and crisp .
  11. Serve hot .
  12. Make the other paratha in the similar manner .
  13. Serve with Pethe ki khatti Meethi Sabzi , All Mattar ki Rasse wali Sabzi , Dahi , Kele ki Chutney and Salad .
