BM # 19   Day 3
For the past two days I have been cooking with tea so  today I decided to make something with coffee. I simply love the aroma of coffee, though I do not drink it, yet I cannot resist coffee based products. I made these Brazilian Coffee Cookies, which turned out awesome, except that the ones at the back side of the tray were slightly over done. I scraped these and enjoyed them.

5o gms ………..brown sugar
50 gms……….. white sugar
50 gms ………..butter
½………………… banana , mashed
¼ tsp………….. salt
¼ tsp………….. baking soda
1tsp……………. coffee pwd
1cup ……………all purpose flour
2tbsp………….. milk.
Beat butter and sugars.
Add mashed banana and vanilla essence.
Add the flour and coffee.
Bind to a dough adding milk.
Place in a frig for about 10 mins.
Remove and shape into round , slightly flat balls.
Make intends with a fork, using some icing sugar.
Bake in a preheated oven for 20- 25 mins at 165deg.
These cookies had a distinct flavor of coffee, not very strong , but pleasing.They were crunchy , not one of those melting in the mouth kinds, but surely this crunch was what I was looking for.Some of the sugar crystals were still present, and these added to the crunchiness.Finally the indents with fork and icing sugar made them look really attractive.

  1. the last pic looks so good, shows how well the cookies have turned out…i am always doubtful of trying new cookie recipes for the fear of burning them, but is good when someone known has tried it

  2. Perfectly made cookies. Adding coffee sounds interesting. I usually add espresso powder to some of the chocolate desserts, but never made anything exclusively with coffee, will have to try them.
