A good cookie normally requires flour, sugar and butter . These are the key ingredients..but when my friend told me to bake some cookies without butter, I wondered how they would taste. I know my friends bake cookies with vegetable oil, but personally I was not sure of the taste. Personally I am not a cookie person, unless it is loaded with chocolate, so trying this one was rather tricky.
While the cookies were in the oven, we were confident that these cookies would be a hit . The whole house was full of aroma, a aroma which was drawing me towards the oven, and taste the cookies. It was hard to wait till they baked. Of course we waited and as soon as they were out we both shared a hot cookie and both of us hugged each other. It was some kind of achievement…..later I laughed over this .
You shall see some more of these butterless cookies soon but in the meantime you could check these Oats and Cranberry Cookies, which are butterless and very very delicious cookies.
Eggless Butterless Rose Cookies
Ingredients
1/4 cup oil
1/4 cup castor sugar
1 cup flour
Pinch salt
1/4 cup curd
1 tsp vinegar
1 tsp rose white essence
1 tsp baking powder
Method
Preheat oven to 200 deg C.
Mix curd, oil, sugar, rose essence, salt , vinegar and baking powder.
Add the flour and prepare a soft dough.
Pinch out small balls and roll it tight.
Place them on a greased baking tray .
With a fork press each ball to flatten it.
Bake for 8-10 minutes .
The base colour will turn golden, but the top will not change colour.
Cool on a wire rack .
Store in an airtight container.

Those cookies sound so exotic with the rose flavor. Using vegetable oil instead of butter sounds very interesting.
These cookies are not only butter free, but guiltfree also. Addition of rose water makes it interesting too.
