Cake Rolls are rolls made with leftover cake crumbs and a binding agent like ganache , cream , jam or even condensed milk . These rolls are moist and give the look of a Swiss roll .
While baking cakes many a times I bake a little extra , I love to make crumbs from the cake and use them for desserts . You could use them in trifles , in parafits, make a crust for a pudding at times just add them in some shakes , oh there are umpteen ways to use these crumbs .I have used these crumbs to make a Sushi also. This time I have used them to make these rolls .
These cake rolls are very simple and taste absolutely fantastic . I have added ganache to the chocolate crumbs and whipped cream to the vanilla crumbs to bring them together and bind into a semi soft dough . One has to be careful while you roll the two layers , make sure you do not have any cracks in the roll . Placing them in the frig overnight gives them the firmness that we need for slicing them . Go ahead try these and you sure are to love them .

2 cups chocolate cake crumbs
1/2 cup chocolate ganache
2 cups vanilla cake crumbs
1/2 cup whipped cream
Whip the cream till soft peaks form .
Blend the vanilla crumbs in a mixer to get even sized crumbs .
Similarly make chocolate crumbs .
In a mixing bowl , mix chocolate crumbs and ganache and make a semi soft dough .
In another bowl add vanilla crumbs and whipped cream and mix well to get a smooth semi soft dough .
Place the chocolate dough between two parchment sheets and roll into a thick rectangle .
Similarly roll the vanilla dough .
Place the vanilla rectangle over the chocolate one .
Now starting from the long side start rolling the rectangles into a log .
Make sure the log has a smooth surface .
Wrap it in a cling film and place it in the refrigerator till firm , preferably overnight .
Remove the film and cut into slices of your choice .
