Theme of the week : Tea Cakes

Week 2 begins and this week I shall be posting some Tea Cakes.
First in the list is a Carrot Cake. This is my daughters recipe , in fact she was the one to make for me. This is such a healthy cake and she makes it very often for my granddaughter’s lunch box. This is a perfect recipe which never fails and you can try with great ease.
 

The orange marmalade takes the carrot cake to a different level, the desiccated coconut is optional, we liked it a lot but can be omitted too. The cake is delicious by itself.

 
Carrot and orange cake
2 cups APF
2 medium sized carrots, grated
1/4 cup oil
1 tsp baking powder
1 tsp baking soda
1 can condensed milk
Beat condensed milk for about 3 minutes, till fluffy.
Add baking powder and baking soda to the flour and sieve it.
Keep flour in a bowl, carrots in the second bowl and oil in the third bowl.
Slowly add little of each from these three bowls and keep beating.
Lastly when done put the batter in a greased baking tray .
Bake at 160 deg C for about 40 minutes.
Serve with orange marmalade and desiccated coconut.

  2. Delicious cake, my hubby loves marmalade like crazy, i m one who cannot take that taste!! Might make it for him!! very beautifully presented vaishali!! are those flowers made of some fruit, looks gorgeous!!!

  3. Delicious cake. This series is something I will love . When you said carrot cake I thought cinnamon something that I do not like in my bakes. Glad its not here. Bookmarking.
