Theme of the week : Tea Cakes
Week 2 begins and this week I shall be posting some Tea Cakes.
First in the list is a Carrot Cake. This is my daughters recipe , in fact she was the one to make for me. This is such a healthy cake and she makes it very often for my granddaughter’s lunch box. This is a perfect recipe which never fails and you can try with great ease.
The orange marmalade takes the carrot cake to a different level, the desiccated coconut is optional, we liked it a lot but can be omitted too. The cake is delicious by itself.
Carrot and orange cake
2 cups APF
2 medium sized carrots, grated
1/4 cup oil
1 tsp baking powder
1 tsp baking soda
1 can condensed milk
Beat condensed milk for about 3 minutes, till fluffy.
Add baking powder and baking soda to the flour and sieve it.
Keep flour in a bowl, carrots in the second bowl and oil in the third bowl.
Slowly add little of each from these three bowls and keep beating.
Lastly when done put the batter in a greased baking tray .
Bake at 160 deg C for about 40 minutes.
Serve with orange marmalade and desiccated coconut.
Do not know if my last comment was posted. Cake looks moist and must have tasted great with orange marmalade
The cake looks fabulous Vaishali. Very simple steps though. Eagerly awaiting your Eggless bakes this week.
beautifully made moist cake, and the orange marmalade is just the right thing to go on top
The cake looks awesome… Love the texture and simplicity of it…
lovely combination of flavours in the cake
The addition of condensed milk to bakes make them richer and yummier. Serving along with the orange marmalade sounds interesting.
Orange marmalade is a nice addition to the flavor. Turned out soft and yummy.
The combination of carrot and orange is a perfect one and cake looks so tempting..
That's such an easy recipe, Vaishali. Dont want to try any sweeet bakes for sometime, but yes, this goes in the bookmarks folder for later 🙂
Nice combo of flavours and love the butty coconut topping – is that fresh or dessicated coconut ?
