We begin with week 3 and this week I have some Cookies, Biscuits and Bars.
For the first day it is Oat and Cranberry Biscuits.
This is a recipe that I got from one of my friends. She gave me a box of these and my hubby loved them. Ever since these are made every fortnight as hubby refuses to eat any other biscuits. I have tried changing flavors, tried adding chocolate, different nuts, but no he just does not want any thing else.This is The recipe that I have been making over and over again, batch after batch.Not only that he wants me to make them for his office too and at times as gifts too.I guess that shows that this is a keeper recipe and a must try.
The best about the recipe is that one can be flexible with it. You could add or minus the almond powder, make it fine or coarse, you could use white sugar or brown sugar or a combination of the two. Honey lends it a beautiful aroma but surely can be skipped and substituted with extra sugar to make it vegan. I have added whole wheat flour, but. you can substitute it with any other flour.You must pulse the cranberries for a sec or two, else they keep popping out. One of the combos that I tried was the Chocolate and Orange combo, which personally is my favorite, but you guys could try whatever your fancy, So for today let me give you the original recipe and if you wish to tweet..wait…do it some other time as actually this one sure is a hit,.
Oat Almond and Cranberry Cookies
4 cups oats
11/4 cups whole wheat flour
1 tbsp baking powder
2 pinches salt
1/2 cup almonds, coarsely ground
1/2 cup cranberries, ground
1 cup oil
1 cup water
1/2-3/4 cup brown sugar
2 tsp honey
Dissolve sugar in warm water.
Add oil and vanilla essence.
Sieve baking powder and flour.
Add oats and salt.
Add almonds and cranberries.
Slowly add the sugar oil mix to the oats mix.
Bind just like dough using your hands.
If the mix is dry and the sugar mix is over, you could add a few tablespoons of milk or water.
And if the mix is wet you could add some more flour or almond flour.
If you leave the mix for a while, it will dry on its own as oats have a tendency to absorb.
Once the dough is done, make small balls and flatten them.
Place them in the baking tray and bake at 110 deg C for 15-20 minutes, or till nice and golden.
Once out of oven, let them cool, they will get that crunch you are looking for.
Almonds could be coarse or finely powdered.
Cranberries have to be slightly pulsed else they keep popping out of the biscuits.
Honey is optional, you could avoid to make them vegan.
You could substitute white sugar if you do not have brown sugar.
You could substitute wheat flour with Ragi for variation.
