Oat Almond and Cranberry Cookies
4 cups oats
11/4 cups whole wheat flour
1 tbsp baking powder
2 pinches salt
1/2 cup almonds, coarsely ground
1/2 cup cranberries, ground
1 cup oil
1 cup water
1/2-3/4 cup brown sugar
2 tsp honey
Vanilla essence
Dissolve sugar in warm water.
Add oil and vanilla essence.
Sieve baking powder and flour.
Add oats and salt.
Add almonds and cranberries.
Mix well.
Slowly add the sugar oil mix to the oats mix.
Bind just like dough using your hands.
If the mix is dry and the sugar mix is over, you could add a few tablespoons of milk or water.
And if the mix is wet you could add some more flour or almond flour.
If you leave the mix for a while, it will dry on its own as oats have a tendency to absorb.
Once the dough is done, make small balls and flatten them.
Place them in the baking tray and bake at 110 deg C for 15-20 minutes, or till nice and golden.
Once out of oven, let them cool, they will get that crunch you are looking for.
Notes
Almonds could be coarse or finely powdered.
Cranberries have to be slightly pulsed else they keep popping out of the biscuits.
Honey is optional, you could avoid to make them vegan.
You could substitute white sugar if you do not have brown sugar.
You could substitute wheat flour with Ragi for variation.

After your intro, I was paying extra attention to the recipe. I was a bit puzzled about the ground cranberries, but you have covered it in the notes :-). I will also be trying this out sometime, I do have strawberries and oats to be used up.
