Ek Top na Dal Bhat is a one pot meal with rice , lentils and vegetables . Whole veggies are added , which are stuffed with a spice blend and cooked along with rice and lentils .
Ek means one and Top is a pan , the actual pronunciation would be toe – p . Dal Bhat is lentils and rice . This is my post under the A to Z series that we have started this year where I have picked the theme Pick One Indian State and Make Three Dishes . For the month of February I have picked Gujarat . The alphabets this month are D, E and F.
Dal – Bhat shaak is a quintessential Gujju meal and we see that they find ways and means to incorporate DBS somehow or the other ! Yes, DBS stands for Dal Bhat Shaak ! When we talk of DBS , it reminds me of my cousin whose mom’s a Gujju , while looking for boys , she made very clear that she didn’t want to get married to a DBS types ! Hey ! I don’t mean to offence the Gujjus , and come to think of it what is wrong in having a complete meal , DBS kinds .
Living in Gujarat , i too love their style of everyday food , it’s basic and simple , gets done in a jiffy ! The Gujju Khichadis are very popular and the Ek Top na Dal Bhat is on the lines of a Khichadi with vegetables , which makes a very delicious healthy meal .

Ek Top na Dal Bhat
To be ground into a paste
2 tsp coriander cumin powder
1 tsp chilly powder
1/2 cup fresh coconut
2 green chillies
1/4 cup coriander leaves
1/8 tsp turmeric powder
1 tsp ginger / garlic paste
Salt to taste
1 cup basmati rice
1/2 cup tover dal
10 baby onions
10 baby potatoes
1/4 cup green peas
1/4 tsp turmeric powder
1/4 tsp red chilly powder
Salt to taste
Grind all ingredients under the paste .
Wash and soak the dal at least 2 hours prior to cooking rice.
Wash and soak rice for 30 minutes.
Peel onions and potatoes , wash and slit them.
Sprinkle with salt . Let stand for 10-15 minutes.
Stuff the onions and potatoes with the ground paste.
Heat 2 tbsp of ghee and add a pinch of asafoetidia.
Add the stuffed vegetables and peas , sauté for a few minutes .
Add rice and dal , all spices and sauté again .
Add 31/4 cups water. Let the rice cook 75 % , then cover and cook on dum till done.
For cooking on dum place a iron griddle under the pot , cover the pot with a lid and place a heavy object ( i used my brass mortar & pestle ).
Drizzle hot ghee before serving .
Serve with Banarasi Laal Mirch ka Achaar and Dahi .
