Today is the second day of Special Theme and I have Energy Boosting Toasts from my drafts . I made these when I picked Sandwiches as my theme for Cooking Carnival.

Juicy, sweet, and convenient, fruit is a terrific energy-boosting treat. The natural sugars in fresh fruit provide energy and focus without spiking your blood sugar levels like refined sugar does. So what can be better than using these as a topping for your toasts ?

I have made three different toasts with the same bread but different spreads and different toppings . They are simple and make perfect breakfast .

Let me share what I have used

Cream Cheese and Dates Toast

1/4 cup cream cheese
1 tbsp honey
Blend the two to get a spread .
Top it with fresh dates, cranberries and walnuts

Mozzarella and Mango Toast

Spread the fresh mozzarella on the toast.
Top with chopped mangoes.
Garnish with lemon zest.

Cottage Cheese and Plum Toast

Spread cottage cheese on the toast .
Top with plum slices and chia seeds .
