Greece is a beautiful country and is one of my dream destination. I haven’t really cooked much from this country and when Valli announced Greek Cuisine as theme for BM 76, I decided to pick it.  For Day 1 I made Greek Coffee, which is a big hit in the house. For Day 2 it is a Greek Salad.

Salads are a must in our daily meals , but I avoid heavy dressings .While on my search I found that Greek Cuisine uses lot of olives, feta, peppers. I came across this salad on a vegan site and found it perfect for myself, as it did not have any dairy products. Being off some dairy products is difficult, but I am trying , and hoping I can manage.This Greek Salad which has simple dressing ,is light and pairs well even with our Indian Daal Sabzi . If you wish you could add feta cheese to the salad.  Let’s check out.

Horiatiko

 

Ingredients

2 bell peppers ( red, yellow and green ) cubed
1 onion
1 cucumber
2 tomatoes
Olives
Chop into bite sized pieces and combine with the dressing.

Dressing

1/2 cup olive oil
1/3 cup orange juice
1 tsp lemon juice
2 tsp oregano and chilly flakes
1 tsp garlic powder
1 tsp minced onion
1 tsp mustard powder
Pinch sugar
Salt
Pepper
Add all dressing ingredients to a jar and shake well.
This makes nearly a cup, use the quantity needed and store the rest.

Finishing the Salad

Add the dressing to the chopped salad ingredients , mix well.

Chill the salad and enjoy.
