Kutchi Bread Channa

 

Kutchi Bread Channa is a Street Food from Kutch .The pav is stuffed with channa , and then soaked in a spicy and a sweet chutney . The end result is a delicious slightly sweet but spicy Pav channa which is absolutely delicious and quite filling too.

The alphabet K had a couple of options but somehow I went on Exploring the Flavours of Street Food and finally decided on this Kutchi Bread Channa .If you google for Kutchi Bread Channa you will find just one video . The video shows the procedure to make the dish . There is no recipe . I actually don’t even know where in Kutch this is sold but I could very well imagine the taste so here I am !

The channa is very simple with our everyday spices . They are just tossed , no frills and will be done in two minutes once boiled . The only thing that is important is that channa should be well boiled and mixed with mashed potatoes , so it doesn’t fall apart while stuffing .

The chutneys here are very important as they give the actual taste to the dish . The spicy geeen chutney is more or less like the pani poori water . Spicy and watery ! The sweet tamarind chutney needs to be watery too .

The video shows two methods of preparing the channa Bread . One where the Pav is slit horizontally , stuffed and finally chutneys are poured lavishly , so the Pav gets soaked and becomes moist . In the other method the vendor slits the Pav vertically , stuffs the pav , holds it in a ladle and dunks it into both the chutneys one by one . The end result is the same – a moist, fluffy pav with channa. I followed the first method and the Pav was moist enough to enjoy .

The recipe reminded me so much of Chola Dabbal a street food from interiors of Mumbai and Sindh . While making chola Dabbal the chola is watery and poured over pav to make the pav moist and then the chutneys are poured . The end result in both the dishes is similar , yet different .
My family loved this street food and want me to add it to the regular menu , but for now you enjoy it.

Kutchi Bread Channa

Ingredients

Channa
Aloo
Spicy green chutney
Sweet tamarind chutney
Pav ( make your own or store bought )

Channa

1 cup boiled chickpeas
1/4 cup boiled mashed potato
1 tbsp oil
1 tsp cumin seeds
1/2 tsp red chilly powder
1/4 tsp turmeric powder
1 tsp coriander powder
Salt to taste

Aloo

1 large boiled potato
1/2 tsp oil
Pinch turmeric powder
Salt to taste

Spicy green chutney

6 green chillies
1 tbsp mint leaves
2 tbsp coriander leaves
1/2 cup tamarind juice
Black salt to taste

Sweet tamarind chutney

1/2 cup tamarind juice
2 tbsp jaggery
1/4 tsp roasted cumin seed powder
1/4 tsp red chilly powder
Pinch asafoetida
Pinch black salt
Salt to taste

Channa

Heat oil and add cumin seeds, let crackle.
Switch off the flame and add all spices.
Switch on the flame and sauté the spices till roasted.
Immediately add the boiled Channa and potatoes .
Mix well.
Keep aside.

Aaloo

Heat oil and add the potatoes, salt and turmeric .
Mix well , place the potatoes on top of Channa .
Garnish with coriander .

 

Spicy green chutney

Blend all ingredients under spicy chutney till a smooth paste is formed .
Remove it in a big bowl and dilute the chutney till it is quite watery .
Check for salt and spice .

Sweet Tamarind Chutney

Add grated jaggery to tamarind juice and cook till the jaggery melts .
Add the spices and cook for one more minute .
Remove it in a big bowl and dilute till quite watery .
Check for sweetness , if you want it more sweet add powdered sugar .

Pav

Slit the pav into three slices. Do not cut through and through .
Cover the Pav with a moist napkin .

Preparing the Bread Channa

Take a pav, and fill the channa mixture between the slits .
Place it in a plate and pour both the chutneys lavishly , so that the Pav gets moist .
Sprinkle coriander and serve.
