Kesari Cheeni ki Roti

We begin with a new year and this is the first post for the year 2018 and we start with a sweet Note , but before we begin Wishing you all a very Happy New Year .

Cheeni ka Paratha , Cheeni is sugar and a Paratha with sugar is what I am posting . As a kid I used to hate sweets , unlike my brothers who loved them . Cakes and desserts weren’t as popular as they are now, mom used to make jelly’s ,custard and China Grass . Halwa’s were popular too but my memories of sugar Paratha are very very vivid . Every evening mom used to make a snack , my elder brother was the one who always demanded something sweet , since I would call for some kind of chat I was not bothered . Over a period of time tastes change , but in case of my brother he is still very fond of sweets and I still love my street food .

Coming to today’s Cheeni ka Paratha , I gave it a twist and added cardamom and saffron to enhance the flavor of the paratha . I have not used too much sugar , but definitely more can be added . The Paratha can be fried in oil but I highly recommend pure ghee , it enhances the flavor of any Indian sweet . While stuffing the Paratha make sure you place the sugar right in the centre of the disc , else the sugar might ooze out while cooking . A crisp sweet paratha with that flavourful cardamom and saffron is a treat by itself and I can assure you , you will love it to the core . Make sure you enjoy it nice and hot .

Kesari Cheeni ki Roti

Kesari Cheeni ki Roti

Ingredients

1 cup wheat flour
3-4 tbsp ghee
Pinch salt
2-3 tbsp sugar
1/4 tsp cardamom powder
Few strands saffron

Method

Dough

Take the flour in a bowl.
Add pinch of salt and 1 tbsp ghee.
Adding water gradually knead the dough .
Cover and let the dough rest for 30 minutes.

Making the Paratha

Preheat a griddle .
Pinch out a lemon sized portion of the dough .
Dust with dry flour and roll to a 3” disc .
Spread some ghee and place 11/2 tsps of sugar, cardamom powder and a few strands of saffron .
Bring together the edges and seal the Paratha.
Flatten the Paratha with your palms first and then gently roll till it is about 5” .
Place the Paratha on the heated griddle , mind you it should not be overheated .
Flip after a couple of seconds .
Apply ghee on the cooked side and flip again .
Now apply ghee on the other side.
Cook till the Paratha is nice and crisp .

  1. Wish you a very happy New Year Vaishali. that’s a wonderful start and looks so inviting. While even I don’t like sweets much and would prefer street food, this sounds good to indulge once in a while.

  2. This is how I use to eat rotis. With sugar and cheeni. Even dosas I would have like this. 🙂 🙂 Love this combination and am def going to try it.
