Kesari Cheeni ki Roti
Kesari Cheeni ki Roti is a sweet flat bread which is flavored with cardamom and saffron. Both cardamom and saffron lend a beautiful aroma to the bread.

  1. Take the flour in a bowl.
  2. Add pinch of salt and 1 tbsp ghee.
  3. Adding water gradually knead the dough .
  4. Cover and let the dough rest for 30 minuets .
Making the Paratha
  1. Preheat a griddle .
  2. Pinch out a lemon sized portion of the dough .
  3. Dust with dry flour and roll to a 3” disc .
  4. Spread some ghee and place 11/2 tsps of sugar, cardamom powder and a few strands of saffron .
  5. Bring together the edges and seal the Paratha.
  6. Flatten the Paratha with your palms first and then gently roll till it is about 5” .
  7. Place the Paratha on the heated griddle , mind you it should not be overheated .
  8. Flip after a couple of seconds .
  9. Apply ghee on the cooked side and flip again .
  10. Now apply ghee on the other side.
  11. Cook till the Paratha is nice and crisp .
