Kesari Mango & Roasted Almond Shrikhand

Kesari Mango & Roasted Almond Shrikhand is a traditional Dessert made with hung curd, sugar and flavorings.  This is one of the most popular desserts of  Gujarat as well as Maharashtra .

The prime ingredient of this sweet is yogurt and patience . Yes you read correct . Making this dessert is simple , but the procedure to make it needs some planning . First we need absolutely fresh home made yogurt , which takes at least 4-5 hours to set . Once the yogurt is set you need to hang it in a muslin cloth or you could place it in a sieve , and place the sieve over a bowl . I always place this in the refrigerator so the final product is not sour . What we need is a chunk of hung yogurt , we call this Chaka .

Once the Chaka is made one can make Shrikhand of various flavours . I have used Alphanzo variety of mangoes, and used both purée and mango pieces . Saffron and Cardamom play a important part in this shrikhand, so please dont miss that. Once the Chaka is ready the sugar should be added and mixed well so that the Chaka is creamy and smooth . After that one can add any purée or pulp , pieces or nuts .

Shrikhand is normally enjoyed with a Poori , a puffed flatbread , but this Mango Shrikhand can be enjoyed on its own . You may not believe , but truly I started eating Shrikhand only after my friend made me eat this variety of Shrikhand . I loved it and ever since I have made this one a number of times in summer and everyone enjoys it ! Yet they say we don’t eat sugar stuff ! Lol !!

Kesari Mango & Roasted Almond Shrikhand

Ingredients

2 cups thick yogurt
1 cup mango pulp
1/4 cup sugar, powdered
1/4 cup mango pieces
1/4 tsp cardamom powder
Few strands saffron
2-3 tbsp almonds , chopped
1 tbsp pistachios , chopped

Method

Soak the saffron in some warm milk.
After a few minutes using a mini mortar pestle , scrub the saffron and make a paste .
Whisk the hung curd till creamy .
Add the powdered sugar and mango pulp .
Whisk again so that everything blends well .
Add the mango pieces , almonds , saffron paste and cardamom powder .
Mix gently.
Garnish with mango pieces , chopped almonds and pistachios .

  1. It looks delicious Vaishali, love your presentation and of course your write up with nice tips. Never made mango flavoured, I’m going to try this soon with the mango pulp I have.

  2. Simple yet elegant dessert. My husband eats 3 or 4 sweet dishes at the max and shrikhand is one of them. And so I prepare it for us now and then though kids hate the idea of sweetened yogurt. 🙂
