L – Lamingtons – Double Chocolate Treat
Small cake cubes dipped in chocolate frosting and rolled in coconut, these are a specialty of Australia.

Ingredients
Chocolate Sauce
Coconut Coating
Instructions
  1. Sieve the flour, baking powder and baking soda.
  2. Whisk oil / butter,condensed milk and vanilla essence.
  3. Mix the dry ingredients with wet ingredients adding coke gradually, till you reach a smooth batter consistency.
  4. Beat well and pour into a greased and lined 8”square cake tin.
  5. Bake at 180 degrees C.for 30 minutes or till a skewer comes out clean.
  6. Once the cake cools down, cut into 16 , 2”squares.
Chocolate Sauce
  1. Mix all the sauce ingredients in a pan .
  2. Place on a double boiler.
  3. Stir till smooth and is of pouring consistency.
Assembling the Lamingtons
  1. Place desiccated coconut on a large tray.
  2. Dip the squares one at a time in the chocolate sauce and then roll them in the coconut.
  3. Transfer them to a wire rack.
  4. Let set .Store in a airtight container, they can stay good for a couple of days.
