L - Laiya Bhel

Laiya Bhel is bhel made  with puffed rice, fried chickpeas and peanuts. Finely chopped onions, tomatoes, coriander and green chillies jazz it up.This is a lip smacking munch from the streets of Lucknow.

 

 Laiya was a new name for me , I heard this for the first time in Lucknow . Laiya is basically puffed rice , what we call kurmura.  These kurmuras are roasted with salt and turmeric and then mixed with kokle chane and roasted peanuts . Chick peas or kabuli channa when roasted or fried are called Kokhle Chane .

 

A mix of roasted chickpeas , roasted peas , roasted peanuts with Laiya is jazzed up with chopped onions , tomatoes , green chilly , raw mango and coriander leaves . A pinch of spicy chaat masala and finally some lemon juice is added , these are then served in paper cones. You just take the paper cone and fill it up , and remove a little  on your palm and enjoy . There are no spoons for eating this jazzed up bhel which is a perfect evening munch.

 

For this bhel I roasted the peanuts, but fried the chickpeas . The green peas are store bought as I am still looking for a perfect recipe to make them .

 

L - Laiya Bhel

Roasted Spicy Peanuts in oven

Ingredients

2 cups peanuts
1 tsp oil
Mix of red chilly powder , chaat masala , cumin seed powder
Salt to taste

 

Method

Place peanuts in a bowl , drizzle oil and toss to coat.
Sprinkle salt and mix well.
Bake at 300 degrees for 20 – 25 minutes, stirring occasionally, till brown.
Transfer to an un greased baking tray.
Remove and mix the spices while still hot .
Spread on a waxed paper, let cool and store in a airtight container.
To make Laiya
Heat 1 tsp oil add a pinch of turmeric and a very small pinch of salt .
Mix well , without burning .
Add the kurmuras and roast on slow fire stirring constantly .
Once crisp , let cool .
Store in a airtight container.

 To make the Bhel

1 cup roasted laiya
Handful roasted peanuts
Handful roasted green peas
Handful khokhla channa
1 tsp onion, finely chopped
1 tsp tomato , finely chopped
1 tsp raw mango finely chopped
1-2 green chilly , roughly chopped
Coriander leaves
Chaat masala to taste
Salt to taste
Juice of 1/2 lemon
Mix the above and finally drizzle lemon juice and mix again.
Serve in paper cones and enjoy .

  3. Eating by hand has its own taste. Earlier even in the beach, sundals doesn’t come with a spoon. Spoons are recent additions. This is such a lip-smacking chaat.
