Leelo Chevdo
Leelo Chevdo is a special potato based namkeen and is a speciality of Vadodara . Vadodara is the second largest city of Gujarat and the word Leelo literally means wet and chevdo is a farsan or a namkeen .

  1. Soak the channa daal for 3-4 hours.
  2. Grate the potatoes , on the thicker side of the grater.
  3. Wash 3-4 times , so that all starch is removed .
  4. Drain the water from the potatoes and spread them on a thick towel .
  5. All you need to do is air dry these grated potatoes .
  6. Once dry deep fry the potatoes , while they are frying add salt to 1 tbsp water , dissolve and add it to the oil .
  7. By adding salt solution the potatoes will naturally become salted .
  8. Remove the crisp potatoes on a kitchen towel .
  9. Now wash the daal and fry it .
  10. Add to the potatoes .
  11. Fry the cashews and raisins .
  1. Heat a tbsp of oil .
  2. Add green chillies , curry leaves and finally sesame seeds .
  3. Switch off the gas and add turmeric powder .
  4. Immediately add 1/2 cup waster.
  5. Switch on the flame and add sugar .
  6. Let the water boil and let the sugar dissolve .
  7. Cook this till you get one thread consistency syrup .
  8. Switch off the flame and add this syrup to the fried potatoes , daal , cashews and raisins .
  9. Mix well so that the mixture is well coated with the syrup .
  10. Leelo Chevdo is ready to serve.
  11. This can be stored for maximum upto a week .
  12. Refrigerate for longer storage .
