I was very fond of eating out but somehow over the years , I prefer to be home and order . I do not want to dress up and go . I feel whatever can be done at home , is the best ! Do I sound lazy ? Well , when it comes to dressing up , yes I am . This change has come over the years , a few years back I loved to dress , and loved going out , but not any more . Age ? Well if you think so !
Slowly I see I am not able to eat outside food too . Fortunately we have some Home chefs who are registered under a brand called Tiffinity and one can download their app on the phone . One can order food from these home chefs . The preorder must be made three hours prior to delivery time so you can get freshly cooked home food . Now if you do get lazy to cook you can always order and since it is home cooked fresh food nothing like it .
So for this take out menu your home chef from Ribbonstopastas has cooked Mexican Fried Rice , which has a variety of peppers , olives and some corn , isn’t it a great one pot meal ? Incidentally Mexican is one cuisine we all like , and I have been cooking it from time to time.

Mexican Rice with Cheese Balls
Baked Mexican Rice with Cheese Patty
Mexican Fried Rice with bell peppers and corn
Ingredients
1 cup rice, cooked
1 tbsp oil
1 small onion , finely chopped
1/4 cup peppers , chopped ( red, yellow , green )
1/4 cup corn kernels , boiled
3-4 cloves garlic , finely chopped
Chilly flakes to taste
Salt to taste
Oregano
Method
Heat oil .
Add garlic, sauté till pink.
Add onions and capsicum and sauté for a minute.
Add corn , rice , chilly flakes , oregano and salt to taste.
Toss well .
Serve hot .
Mexican Fried Rice
Ingredients
- 1 cup rice cooked

Nice to know about the app. In Trivandrum we didn’t have any app but there was a big network of home cooks that made my mother’s life a lot easier. It’s not the age but rather the interest that makes us not want to get ready and go out. For me it’s a phase that comes and goes. Hopefully it’s the same for you too.
