For Day 2 under Special Themes I am posting recipes from my Andhra Thali. Yesterday it was Nutty Karela Crisps. For today I have a delicious curry with drumsticks.
We all know that drumsticks are loaded with healthy proteins and essential minerals making it a healthy food. Being high in calcium, iron and other vitamins, drumsticks help in strengthening bones.They help to lower the blood sugar level , eases respiratory problems. Also ,they are very good for pregnant ladies .
Today’s drumstick curry is a rich curry with cashew and poppy seed gravy . Serve it either with rice or chapati , though I like to eat a bowl of this without any accompaniment.
Munnakkaya Masala Kura
2 drumsticks, cut into 2″ pieces
2 tbsp oil
1 tsp cumin seeds
Few curry leaves
1 onion, finely chopped
1/2 tsp turmeric powder
1 tsp red chilly powder
Salt to taste
6 cloves garlic
1 tbsp coconut , grated
1 tsp poppy seeds
Water as required for making the paste
Heat oil . Add cumin seeds and curry leaves .
Add onion and sauté till light brown .
Add the drumsticks, turmeric powder, chilly powder, salt and one cup water.
Cover and cook till the drumsticks are 50% tender.
Add the prepared paste and half cup water .
Mix well and cook till the drumsticks are done .
