N - Nariyal ki Meethi Roti

Nariyal ki Meethi Roti is a sweet flatbread stuffed with coconut and nuts . It has the goodness of coconut , tastes amazing , looks pretty and above all has been made in an airfryer .

Coconuts are considered a miracle food and are very versatile . It is used in everything from our daily cuisine to our beauty regimens . They are highly nutritious, rich in fiber, and packed with essential vitamins and minerals.

Today I have a sweet flatbread for the theme Flatbreads and More . The roti is stuffed with roasted coconut and nuts . A teaspoon of rawa has been added so that the stuffing comes together . Powdered nuts , saffron and cardamoms make it very rich . While making this roti , I wanted to stuff the roti with a good amount of stuffing , so decided to make it with two layers of roti , stuffed it well and sealed it with a simple design . I did not roll after stuffing . While cooking the roti on the griddle , I felt it was a better idea to roast it in an airfryer or bake it . So I roasted the roti for just a minute on the Tawa and then placed it in an airfryer . The roti cooked uniformly and it was such a pleasure to see such even cooking . I brushed the roti with some ghee and sprinkled nuts and decorated it with a silver leaf.

The wonders of coconuts never cease to amaze. They can add flavor, variety, and healthy nutrients to our diet. This roti is sweet but at the same time nutritious and delicious . The roti can be stored for a day or two , but make sure you warm it up .

 Nariyal ki Meethi Roti

Nariyal ki Meethi Roti

Ingredients

Dough

1 cup all purpose flour
Water to bind

Stuffing

2-3 tbsp ghee
1 tsp semolina
3/4 cup coconut
1/2 cup milk
1/2 cup sugar
1 tsp cardamom powder
2 tbsp almonds , pistachios , chopped
Few strands saffron

Method

Dough

Take the flour in a bowl and knead to a semi soft dough .
Cover and keep aside for 15 minutes .

Stuffing

Take a non stick pan and add ghee to it .
Roast the semolina till pink .
Immediately add the coconut .
Roast the coconut for 3-5 minutes .
Add milk and sugar and stir well .
Add the cardamom powder and nuts .
Simmer the mixture for 2-3 minutes or till the ghee separates .
Let cool.

Making the Roti

Pinch out six lemon sized balls from the dough .
Roll each ball into a 6” disc .
Place one disc on the counter and spread the prepared stuffing .
Make sure you leave1/4” on the sides .
Apply water on these edges .
Place another disc on top of the stuffing and seal the edges .
At this point you could make a decorative design .
Brush the paratha with very little ghee and roast the paratha for a minute on both the sides on a griddle .
Pre heat the airfryer for 5 minutes and place one paratha at a time in the airfryer to roast . It should take 4-5 minutes to get that golden colour at 180 temperature .
Remove and enjoy without any extra ghee or brush with ghee and garnish with nuts .
