The last week of BM #79 and I shall be posting under Special Theme. For Day 1 , I have a recipe which is a total hit with my friends and family . I understand there are people who run away as soon as they hear the word Karela or Bitter gourd . Trust me this version is not bitter and you need not run away.

 

I made this for the Andhra Thali  , Valli has a beautiful post on it and I can’t thank her enough for sharing this recipe . After that Thali , I must have made these Nutty crisps at least 8-10 times , so you can imagine how delicious these must be.

 

Can you believe I served these for a formal dinner  and everyone just raved about them . There were more elaborate and formal dishes but these gourds were ranked No 1 . Trust me I was on cloud nine . Thanks Valli !

 

This time when I made these my daughter asked me for the recipe , I was surprised , it was not on the blog ! How could I forget to document this fantastic recipe ! Well here you are , with the recipe and freshly made Nutty Karela Crisps . Enjoy !

 

Nutty Karela Crisps / Bitter gourd Crisps

 

Ingredients

500 gms Bitter gourds
2 tbsp curd
Salt to taste
1 tbsp rice flour
Peanuts
Cashew nuts
Whole garlic
Curry leaves
Spice mix to taste
(Red chilly powder + chat masala)

 

Method

Scrape the gourds lightly .
Cut into slices .
Sprinkle salt and curd and mix.
Keep aside for 10 minutes.
Heat oil for frying.
Fry the peanuts , cashews , while garlic and curry leaves.
Wash the gourds and squeeze the excess water .
Sprinkle rice flour , mix and deep fry till crisp .
Mix with fried nuts , garlic and curry leaves .
Sprinkle salt and spice mix . Mix well .
These crisps can be stored in an airtight container , that is if they are not gone from the table.

  1. First I read it’s make add Kerala nutty crisps and it was fine to me, but when I read it right i.e. Kerela when I was about to run away. Having faith in you and taking your words I’m certainly going to try these ASAP.

  3. I run miles away from bitter gourd. However, when my mother in law fries them and adds nuts, sesame seeds and poppy seeds to it, I don’t mind eating it. Beautiful thali.

  4. Such an elaborate thali and yes I fall into the group who runs away at the mention of Karela. But, since u are saying, they are too good I hv to drop my inhibitions and try this.
