Orange Upside Down Cake

Orange Upside Down Cake is a cake made with oranges and chocolate cake batter . The caramelized oranges are the highlight of the cake .

Two weeks back it was my friend Sarita’s birthday . Sarita is a friend from school , to be precise from the very first day of school and we boarded the school bus from the same stop . For almost eleven years we boarded the same school bus . Fortunately she is in the same town after getting married so we have remained friends for over 55 years !

Well , this year I decided to celebrate her birthday , and invited all our friends . We had a chat party and this Orange Upside Down Cake was her birthday cake . The cake was a instant hit and everyone loved it .

Birthday Cakes are always special , and this Upside Down Cake with chocolate flavour is terribly sinful . The caramelized oranges add on to the flavour of the cake though I wish I had covered and used more orange slices as these were the first to vanish . I also added a bit of orange zest to the cake and everyone loved biting into it .

It was a lovely party and the birthday girl became very emotional when one of the friends sang a birthday song and we joined in the chorus . We ended the party with handmade candles as favours . It was a day when we both friends were very happy , happy to be such friends who thought of each other’s happiness . Life is all about happiness , isn’t it ?

Orange Upside Down Cake

Orange Upside Down Cake

Ingredients

Cake

11/2 cups all purpose flour
1/4 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1 cup water
1/3 cup oil
1 tbsp lemon juice
1 tbsp vanilla essence
1 tbsp orange zest

Caramel

4 tbsp sugar
1 tbsp butter
Orange slices

Method

Caramel

In a nonstick pan heat sugar.
Let dissolve , add butter .
Let the sugar turn golden , keep stirring to get a uniform colour .
Pour the caramelized sugar into the baking tin and arrange the orange slices .
Keep the tin aside .

Cake

Sieve the dry ingredients.
Warm the water and add sugar , add oil and mix.
Let the water come to room temperature.
Mix the ingredients into the wet.
Mix well to make a smooth batter.
Pour the batter into the prepared mould.
Bake at 180 deg C for 35 to 40 minutes or until screwer comes out clean.
Let the cake cool.
Flip over the cake and serve.
