Palakchi Patal Bhaji
Paalakchi Patal Bhaji is a high protein Maharashtrian style spinach curry . The curry is super delicious with peanuts , coconut , yogurt and gram flour .

Instructions
  1. Soak gram and peanuts for 30 minutes.
  2. Cook gram and peanuts in their soaking water for 3-5 minutes . Drain and set aside .
  3. Clean spinach , wash and chop fine .
  4. Blanch in 500 ml boiling water for 2-3 minutes . Drain and set aside .
  5. Mix gram and yogurt in a bowl till smooth .
  6. Heat 11/2 tbsp of fat and sauté the onions over low heat for 4-5 minutes .
  7. Add spinach , gram and peanuts . Sauté for 4-5 minutes .
  8. Stir in the gram yogurt mix , increase the flame to medium and bring to a boil and cook for 3-4 minutes .
  9. Mix in salt and add coconut .
  10. Reduce the flame and simmer for 3-4 minutes .
  11. Heat ghee / oil in another pan for seasoning .
  12. Add mustard seeds, let them pop .
  13. Stir in turmeric, ginger , green chillies and garlic .
  14. Cook till golden.
  15. Pour the seasoning over the spinach, stir once and cover the pan for 2-3 minutes .
  16. Serve hot with rice or chapati .
