We begin with the second week of BM 81 . For this week I have chosen to post recipes under the theme Anniversary Recipes. Whenever we have a party and we decide on snacks it is always the fried snacks which are on top of the list , pakoras being one of them . Paneer Pakoras make a rich snack and are perfect for any party . The paneer here has been stuffed with a spice powder and then batter fried to a nice crisp golden .These pakoras were my dad’s favourite and he would ask mom to make them whenever we would have guests . I definitely get nostalgic while making these.
These pakoras can be enjoyed by the kids too since the spice level can be adjusted according to personal preference , but one must remember that the cheese does not have any spice so a little spice is always needed , else they taste very bland . I made these paneer pakoras for my Protein Rich theme where I posted these under Sindhi Thali .
Paneer ke Pakore
Ingredients
250 gms paneer , chopped into rectangular pieces
oil for deep-frying
Spice Powder
1/2 tsp chilli powder
1/2 tsp garam masala
1/2 tsp coriander-cumin seeds powder
1/2 tsp dried mango powder
1/2 tsp chaat masala
salt to taste
For the Batter
1 cup chick pea flour
1/2 tsp chilli powder
1/4 tsp turmeric powder
2 pinches of asafoetida
1 tbsp hot
a pinch of cooking soda
salt to taste
Method
Combine all the batter ingredients along with ½ cup of water in a deep bowl and mix well. Keep aside.
Cut the paneer into thick rectangular pieces , making a slit in between . Do not cut through .
Mix all the spices under spice powder .
Fill the spice powder in the paneer slit .
Heat the oil in a deep non-stick kadhai, dip each paneer piece in the batter, a few at a time and deep-fry on a medium flame till golden .
Serve hot with Chutney .

Paneer pakoras bring lot of memory for me. I grew up in Kanpur and one of my dad’s colleague’s wife used to make this when we visit them. I used to just finish the while plate without sharing with anyone. I remember that she added a bit of ajwain to the batter ad i liked the flavor of it. After seeding yours, I am tempted to eat them.
That spice powder must have elevated the taste to the next level. Yumm
