I am a great fan of Pav Bhaji and ever since I have given up on bread I didn’t know how to incorporate this Bhaji in my meal . I am off wheat too , so had to come up with something innovative .
I made the Bhaji , but made it little dry , cooked it and then added some jowar flour to it , binded this into a dough , added some extra Pav Bhaji masala and made rotlas out of it . The rotlas or parathas turned out very flavourful and trust me We enjoyed them to the core . While the rotla was being cooked the house was full of Pav Bhaji aroma . I did not apply any oil or butter, but a dollop of butter will definitely bring these parathas to a different level.
These parathas are my Day 1 post under the theme whole grains .
Pav Bhaji Paratha
Ingredients
Boil together
2-3 potatoes
1 small carrot
2 flowerets cauliflower
1/2 cup peas
Other ingredients
1 tsp oil / butter
1 onion
1/2 capsicum
2 tsp garlic paste
1 tomato
2 tsp pavbhaji masala
1/2 tsp coriander powder
1/4 tsp rock salt
2 tsp red chilly powder
Coriander leaves
Few drops lemon juice
Salt to taste
Jowar flour as per requirement
Method
Pressure cook all vegetables under boiling , add very little water after two whistles, open the cooker and drain the water .
Use the water as stock for some other dish .
Heat oil .
Add onion and capsicum , sauté.
Add garlic paste , sauté.
Add tomato and mash it up .
Add the spices and the boiled vegetables .
Mash everything very well .
Add coriander leaves and lemon juice .
Now transfer this Bhaji into a wide plate so that it cools down.
Once it has cooled add the jowar flour and bind a dough.
Pinch out balls and roll into discs .
Roll these on a plastic sheet for easy rolling .
Cook on a griddle , till brown spots appear.
Flip and cook the other side .
Apply ghee or oil and roast till crisp .
Pav Bhaji Paratha
Ingredients

- 1 medium onion finely chopped
- 1/2 capsicum finely chopped
- 2 tsp garlic
- 1 medium tomato
- 2 tsp pav baji masla
- 1/4 tsp rock salt
- 2 tsp red chilly powder
- 1/2 tsp coriander powder
- coriander leaves
- lemon juice
- salt to taste
- Jowar flour as per requireement
Instructions
