Most of the Indian homes cook Khichri  / khichdi at least once in a week . Khichri is a mix of rice and lentils , which could be made with or without vegetables . You can call it a comfort meal where the khichri needs no add ons. Pickle or curd could definitely be served , but for us it is just khichri .

This baked khichri is made with simple boiled rice , you could use the leftover cooked rice too . The rice is layered with boiled and tempered masoor daal . A layer of mixed boiled veggies is added along with some fried onions . The khichri is topped with a layer of curd and then baked , but I skipped that layer and instead garnished with veggies and onions .You get your protein from the daal and veggies like beans, peas and cauliflower.

To be frank this Biryani was not made and clicked with Mega BM in mind . It was our dinner and since it was a new recipe I clicked . The Biryani tasted fantastic and the family was surprised , no frills , no add ons, no special spices , yet so flavourful . Hubby was totally impressed . Now a recipe which impresses the family and fits in the theme definitely needed documentation, hence a no frill Protein Rich Baked Biryani .

 

Baked Khichri Biryani

Ingredients

11/2 cups cooked rice
1 cup cooked masoor daal boiled with salt and turmeric
1/4 cup tomato purée
11/2 cups mixed vegetables , boiled ( beans , potatoes, cauliflower , peas)
1/4 cup fried onions

Mixed vegetables

1 tbsp oil
1 tsp cumin seeds
3-4 green chilly , slit into two
1 tbsp ginger strips
1/2 tsp red chilly powder
1/2 tsp biryani masala
1/4 tsp coriander powder

Method

Heat oil.
Add cumin seeds, let splutter.
Add green chilly and ginger, sauté.
Add all spices and roast for a minute.
Add the boiled vegetables and mix.
Cover and cook for 3-4 minutes.

Masoor Daal Layer

Mix tomato purée to the cooked Daal.

Layering the Biryani

Grease a oven proof dish.
Divide the rice into two parts .
Spread one part in the dish .
Now spread all the daal over the rice.
Sprinkle half the fried onions.
Reserving 1/2 cup mixed vegetables spread a layer over the onions.
Top with the rest of the rice .
Garnish with mixed vegetables and fried onions .
Add blobs of ghee or butter if you like .
Cover with foil and bake the khichri at 180 deg C for 15 minutes.
Serve hot with pickle or curd.

Layered Vegetable Daal Khichadi Biryani

The humble khicdi turned into a Protein Rich Biryani, which is comforting as well as delicious.

  2. Any variety of khichdi is welcome in our house, we’re great fans of it. SO far I’ve not made it using masoor dal. So next khichdi is going to be masoor dal one and baked.
