When I chose to bake all cakes for A – Z Baking around the World  the only alphabet that I was worried was ‘Q’, but I was surprised that It was a quick search and a awesome one. Years back I used to bake a date cake and this cake reminded me of it. I knew it would be a hit so I just went ahead and baked it without any hesitation.

 

The cake was made during rationing and so used basic ingredients and topped with a sugary caramel icing infused with shredded coconut. The cake was first prepared at the coronation of Elizabeth II in 1953. The origin of the cake is naturally Great Britain but this is a cake which is very popular in Canada. It is sometimes served with tea.

I made the cake using whole wheat flour, the cake turned out extremely moist . I topped it with  caramel made with brown sugar, which I shouldn’t have done. The taste of the brown sugar caramel was slightly bitter . Had I used my white sugar caramel , I would have enjoyed the cake more, but I wanted the cake to be authentic.

After spreading the sugary coconut icing, the cake needs to be grilled so that the coconut gets a toasted flavor.The flavor of the coconut was pleasing, but even if you  eat the cake without any topping you will love it. The cake is nutritious  with whole wheat flour, dates and walnuts. I would call this cake Energy Food.

Queen Elizabeth Cake

Ingredients

1 1/2 cups whole wheat flour
Pinch + 1 tsp baking soda
1 tsp baking powder
3/4 cup sugar
1 cup dates, seedless
1 cup water
1/2 cup oil / butter
1/2 cup walnuts
1 tsp vanilla extract

Method

De seed the dates, if not using seedless dates.
Chop into smaller pieces.
Place them in a bowl.
Sprinkle a pinch of baking soda on dates.
Heat water, and pour this hot water over the dates.
Cover the bowl for 10-15 minutes.
Mix the flour , baking soda and baking powder.
Mix in the powdered sugar.
Now puree the dates along with water.
Add oil to it and pulse the mixer again so that the oil and dates blend well.
Add vanilla extract.
Mix all wet ingredients with the dry ingredients .
Add walnuts and mix again.
Pour into a lined and greased baking tin and bake at 180 deg for 40-45 minutes or till done.
Check with a skewer , if it comes out clean the cake is done.
Let cool.

Topping

Caramel

Caramel

Ingredients 

60 gms unsalted butter

65 ml cream

95 gms soft brown sugar

 

 

Method

In a non stick pan keep sugar to melt.

The flame should be low.

After the sugar melts, cook it for another two minutes, stirring constantly.

Add butter and as soon as it melts, add cream.

The caramel has to be stirred continuously and the fire very low.

Once the three ingredients incorporate the caramel is ready.

 

Finishing the cake

Pour the prepared caramel on the cake.

Sprinkle shredded coconut.

Place in a the oven for 5-10 minutes for the coconut to toast lightly.

Remove garnish with dates and walnuts

  1. I am all for energy food if it looks and tastes like this one. It looks amazing…must sound too repetitive to you but I am drooling at very single cake of yours and need to try them all! Yum yum

  2. I have also chosen queen Elizabeth cake but it did not suit with my subtheme. Love the decadent looking cake.
