Rajigiri ki Roti

Rajigiri Roti is a healthy gluten free Indian flat bread made with Amarnath flour or rajigiri flour as called in Hindi . This is a roti which is normally made during the fasting days .

As a kid I loved the Rajigiri ladoos , back then I had no clue of the flour , I would happily gorge on these ladoos when these hawkers came around selling it .

Amarnath is a super grain which migrated from America and now is an important ingredient of our fasting rituals . This flour is rich in iron , vitamin A , B and C. Surprisingly the flour has a good amount of calcium and protein too .

Today I have a flatbread with this flour and I made it for the first time . I am not a person who is into fasting , but when I read about its health benefits I was truly impressed and decided to make a complete Fariyali spread , which is the fasting spread .

Since the flour is gluten free it is rather tricky to work with it . I used boiled mashed potatoes , adding mashed warm potatoes to the dough helps in making the dough pliable and it helps in easy rolling . You can also use warm water if not using potatoes . One can add coriander leaves and green chillies to add for taste . I could roll the roti with the help of a little dry flour , but it can also be rolled in between two plastic sheets . The roti is cooked on a griddle with the help of ghee , but oil too can be used .

I decided to make a  Fariyali Thali ,my very first Fariyali Thali. The Thali was a treat and for the first time I realized that fasting food could be so delicious.

Ingredients

1 cup rajgira
1/2 cup potatoes , boiled , mashed
1 tsp green chilly, chopped
1 tsp ghee
Coriander leaves
Salt to taste

Method

Using a mixing bowl , add flour ,boiled mashed potatoes, green chilly , coriander leaves , oil and salt.
Mix all ingredients well with hand .
Start kneading the dough , you will require very little water as we are using oil and potatoes , both will help in binding .
Knead to a dough which should not be very soft .
Pinch out lemon sized balls .
Take one ball , flatten it and then dust it with rajgira flour .
Roll to a 4-6” disc .
Cook on a griddle using medium flame .
Apply ghee on the cooked side then flip over and apply ghee on the other side too .
Cook till brown spots appear on both the sides .
Make rest of the parathas in the same manner .
Serve with Fariyali Aloo ki Sabzi .

  1. With a thali like this, I don’t mind fasting regularly! Such a fabulous spread of dishes you have made Vaishali!! And the rotis have turned out so soft…hard to believe it is gluten free. Hats off to you!

If you serve me this thali, i can fast everyday without any hesitation, look at those basundi, gulab nariyal paani, just cant resist to all those dishes you have served with this gluten free Rajigira roti. I never tried rajigira flour in my cooking, cant wait to explore this flour and cook with. Roti looks absolutely prefect and definitely my kind of the flour as well.

  5. Wow fariyali thali looks so sinful Vaishali and nobody would ever say fasting food is bland or boring after having a look at your thali! I too had tried rajigiri flour and it was quite tough working on it. Would surely make your recipe next time. Everything else on the plate looks good as well. those vadas are so tempting and how is this peanut chutney made? Please do remember to blog all these dishes, it will surely be such a task for you!

  7. What a spread Vaishalli ! This super duper farali thali can tempt anyone to go for fasting. Rajgira paratha with lots of potatoes mashed in it tastes delicious. This is how I always make my vrat ka paratha

  8. First of all, that thali looks fit as a freasting Thali! So yum! I ahve my eyes on that gulab nariyal paani. I am trying to find Amaranth flour here but not able to get it.Am still looking for it. Anyway, this roti is something I will definitely try out as soon I get a pack of this flour. And also should try out the ladoo you mentioned.
