Rajgira ka Paratha
Rajigiri Roti is a healthy gluten free Indian flat bread made with Amarnath flour or rajigiri flour as called in Hindi . This is a roti which is normally made during the fasting days .

  1. Using a mixing bowl , add flour ,boiled mashed potatoes, green chilly , coriander leaves , oil and salt.
  2. Mix all ingredients well with hand .
  3. Start kneading the dough , you will require very little water as we are using oil and potatoes , both will help in binding .
  4. Knead to a dough which should not be very soft .
  5. Pinch out lemon sized balls .
  6. Take one ball , flatten it and then dust it with rajgira flour .
  7. Roll to a 4-6” disc .
  8. Cook on a griddle using medium flame .
  9. Apply ghee on the cooked side then flip over and apply ghee on the other side too .
  10. Cook till brown spots appear on both the sides .
  11. Make rest of the parathas in the same manner .
  12. Serve with Fariyali Aloo ki Sabzi .
