Rice and curry in Banana leaf packets are rice and curry packed in banana leaves , steamed and then served as a complete meal .
Presenting the same food in a unique style is what really impresses me . Today I am presenting Bhuga Chawara with a mattar paneer curry in banana leaf packets . I made rice with some onions and spices , though you can use plain white rice too . I used a paneer curry , but one can use a mix vegetable or any other curry too . You need to cut the leaves into rectangular or square pieces , make sure you roast the leaves on the open flame for a few seconds . This shall make the leaf pliable and it won’t tear while packing . By the way I have to tell you that it was a complete task getting these leaves .
Once we have the leaves ready you can make the packets . I placed the rice , topped it with some curry , some boiled green peas , some fried onion , kasoori methi and finally a whole green chilly . Wrap up the packet by bringing the sides together . If you wish you could tie this packet . Place all the packets in the steamer and steam for 10-15 minutes . While steaming the aroma of the banana leaf and the flavours from the fried onion and kasoori methi are infused and as soon as you open the rice packet you will get a wonderful aroma and a steaming hot individual meal . The green chilly steams up and it’s lovely to bite into it .
Now don’t think that we can serve these packets only with Indian combos , you could make the Thai combo with steamed rice and Thai Yellow Curry / Thai Red Curry ! Mexican Combos with Rice and Curry could be another amazing combo . Go ahead get innovative and make the Rice and Curry in banana leaf packets , just the way I have done for Biryani , Pulao , Khichadi Festival .
Rice and Curry in Banana Leaf Packets
1 cup basmati rice
2 tbsp oil
1 bay leaf
1 big cardamom
1 large onion
1/4 tsp red chilly powder
1/4 tsp garam masala
Salt to taste
1/2 cup fried onion
1 tbsp coconut ,grated
3-4 whole red chillies
1 tsp coriander seeds
1/2 tsp cumin seeds
2 cloves garlic
1/4 cup tomato purée
Salt to taste
1/4 cup green peas, boiled
1/4 cup cottage cheese cubes ( marinated with salt and chilly powder )
Wash and soak the rice for 30 minutes .
Add bay leaf and big cardamom .
Add onions and sauté till pink .
Add red chilly powder and garam masala .
Add 2 cups water . Let boil .
Add salt and rice .
Cook till almost all water is absorbed , simmer and cook on Dum for 5-7 minutes .
Each grain of the cooked rice should be separate .
Heat the ghee .
Sauté the paste for 3-4 minutes .
Add little water and boil .
The curry should be thick .
Assembling the rice packets
Cut the banana leaf into medium sized squares .
Spread one portion of rice, spread some curry on top .
Place a slice of cottage cheese .
Spread some green peas .
Sprinkle fried onion and kasoori methi .
Fold the individual packets securing with tooth picks or they remain perfectly sealed if you place them upside down .
Steam the packets for at least 15 minutes .
Serve hot .
