Sai Bhaji Koftas are koftas or deep fried dumplings made from the popular Sindhi dish SaiBhaji . Sai Bhaji is a mix of veggies , greens and lentils .
We have some very popular combos which are made very regularly , Sai Bhaji Bhuga Chawara , Sindhi Aaloo is one of them . This meal is made at least once a week . There are times when we make this combo and Juhi and I want to eat something from outside . With Zomato , Swiggy and Uber Eats life has become easy – you just feed the dish on your phone and your food is delivered within a short time . Those are the days when we have leftover Sai Bhaji ! So we either make Sai Bhaji Tikkis or make Sai Bhaji Koftas .
These Koftas are actually very delicious and I love to use my air fryer for all the food which actually needs frying . Air Fryer helps to cut down the guilt . Right ? Coming back to Koftas , all you need to do is dry the cooked Sai Bhaji and add some herbs and spices , make it into a ball . You have the choice to deep fry , air fry or use a paniyaram pan to roast these . You can add them to the gravy of your choice , though I have made a onion tomato gravy .
You can serve these Koftas with roti , Paratha or some Biryani too . At times when the koftas are done , they just disappear in minutes and they taste absolutely fantastic even without the gravy ! So I put the ball in your court , you decide how you want to serve them .

Sai Bhaji Koftas
1 cup saibhaji ( ready )
1 onion , small chopped
2 green chillies , finely chopped
1 tbsp coriander leaves , finely chopped
2 tbsp besan / chickpea flour
1/4 tsp coriander seeds
1/4 tsp anardana
Salt to taste
1 onion , large chopped roughly
1 tbsp ginger garlic paste
2 large tomatoes
1 green chili
1/2 tsp coriander powder
1/8 tsp turmeric powder
1/4 tsp chilly powder
1/4 tsp garam masala
Salt to taste
Using a non stick pan , add the ready saibhaji to it .
Let cook on full flame , stirring at regular intervals .
Cook till the saibhaji is completely dry .
Switch off the flame , let cool .
Add all the ingredients mentioned and mix well .
The cooked Sai Bhaji has salt so make sure you add just a pinch .
Grease your hands and pinch out lemon sized balls .
Heat oil and drop them two at a time .
Fry till golden and crisp .
Alternatively use your air fryer to make them crisp .
The koftas are ready .
Heat 2 tbsp oil and add onions .
Cook till they turn golden .
Add ginger garlic paste .
Cook for another minute .
Add tomatoes .
Cook till the moisture disappears .
Switch off the flame and let the mix cool.
Once cool blend it to a fine paste .
Transfer back to the pan .
Add the dry spices and cook for 2-3 minutes or till oil separates .
Add water to adjust the gravy consistency .
Let boil a few minutes .
Add the Koftas and serve.
