Soya bean ji Bhaji
It is like mock meat and is cooked with lots of onions , ginger garlic and tomatoes . This is cooked in typical Sindhi style of cooking called Daag where I used soya granules as well as chunks .

Salt to taste
Soak the soyabean in hot water for 15 minutes.
Heat oil , add onions, sauté till pink .
Add ginger garlic paste and sauté till the onions turn brown .
Add puréed tomatoes and cook till all moisture dries up .
Drain the water from soyabean and squeeze with hands to remove excess moisture .
Add the squeezed soyabean and sauté well , till the raw smell of soya is gone . If very dry add some oil.
Add all spices including salt .
Cook with spices till the spices are cooked , about a minute .
Add water and adjust the gravy consistency .
Pressure cook for 2 whistles and then simmer for 5-7 minutes .
Open after the pressure is released .
Serve hot with rice or chapati.
