Tawa Karela
These Karelas have been made on a Tawa, with a delicious stuffing. The gourds should be marinated an hour before to remove the bitterness.

Marinating Karela
  1. Peel and remove stalks .
  2. Remove any hard seeds and rub salt inside as well as outside .
  3. Sprinkle a tbsp of any flour , 2 tbsp yogurt and a pinch of sugar .
  4. Mix well and keep aside for an hour.
  1. Heat1 tbsp oil on tawa.
  2. Add fenugreek seeds, nigella seeds and fennel seeds .
  3. As soon as fennel changes color add onion and fry till golden .
  4. Add salt , dry mango powder red chilly powder , garam masala and coriander powder.
  5. Cook for a minute , mash slightly and remove from fire .
Making the Karelas
  1. Wash the karela’s very well and squeeze out the water .
  2. Boil the karela’s in 4-5 cups water along with 2 tsp salt.
  3. Let boil for 7-8 minutes or till they are soft .
  4. Drain and cool .
  5. Fill 1 tbsp of onion stuffing in each karela .
  6. Heat oil on a tawa and place the karela’s, stirring occasionally till crisp.
  7. Slide the karela’s to the side to drain excess oil .
  8. Serve hot with chapati .
