Vegetable Khichadi
Vegetable Khichadi is a mix of rice and lentils with a addition of mixed vegetables . The Khichadi is a mushy one pot Indian meal.

Ingredients
Instructions
  1. Wash and soak the daal and rice for 15-20 minutes .
  2. Pressure cook with salt and pinch turmeric powder for 3 whistles .
  3. Open the cooker after the pressure releases.
  4. In another pan add oil.
  5. Add cumin seeds.
  6. Immediately add onions, sauté till translucent .
  7. Add ginger garlic paste and green chillies .
  8. After a minute add tomatoes .
  9. Cook till mushy .
  10. Add the cooked khichadi from the cooker .
  11. Check the consistency , add water if needed.
  12. Mix in the boiled vegetables.
  13. Cook for a few minutes.
  14. Serve with hot ghee .
