Thadri is a festival when the Sindhi community prepare the food a day in advance and do not light the stove. They have a special set of veggies for this festival. Most of the people deep fry the veggies like Lady fingers and Gourds. Since the food is left outside and not refrigerated deep frying helps to retain the shelf life. Some families saute them too.
The Sanna Pakora are a very famous Sindhi snack and these are absolutely delicious for munching. People like to roll them in pooris and enjoy. These fritters get their crunch by double frying, which of course is lost by next day, but truthfully even after a day these cold pakoras taste amazing.
The Sindhi Sai Bhaji is very popular. This is made with a variety of veggies and daal, but the saag for thadri does not have any of these. Its a simple version of spinach which is slighly sour and is relished with Lolas.
Tariyal Bhindiyu
Ingredients
250 gms lady fingers
1/4 tsp red chilly powder
1/2 tsp coriander powder
1/4 tsp dry mango powder
1/8 tsp turmeric powder
Salt to taste
Method
Wash and wipe the lady fingers.
Snip off the heads and tails.
Deep fry the lady fingers till light golden.
Remove with a slotted spoon .
Sprinkle spices and toss.
No need to heat with spices.
Tariyal Karela
Ingrdients
4 big bottle gourds
1/8tsp turmeric powder
1/4 tsp red chilly powder
1/2 tsp coriander powder
1/2 tsp dry mango powder
Method
Peel and prepare the karelas.
Chop them into 2-3 ” pieces.
Squeeze out the extra water .
Deep fry till golden.
Sprinkle spices and toss.
Saag
Ingredients
500 gms spinach
4-5 cloves garlic, finely chopped
1 oinon, finely chopped
3-4 tomatoes, chopped
1/2 tsp red chilly powder
1/8 sp turmeric powder
1 tsp coriander powder
salt to taste
Method
Heat 2 tbsp oil in a pressure cooker.
Add onions and garlic., saute till pink.
Add washed and chopped spinach, tomatoes and spices.
Cook till the moisture dries.
Add a cup of water and pressure cook for 3-4 whistles.
Let the pressure drop, open the cooker and mash the spinach , till well blended.
That is a mouthwatering spread, specially deep fried bhendi & karela.
All the veggies for thadri looks very tempting.
