Virgin Mojito is mocktail which is very popular in restaurants . This is originally a Spanish drink and one of the most refreshing drinks for summers. The same drink with some Vodka makes it into a fantastic cocktail drink. Wait, I am not making a cocktail here…no I do not consume any kind of alcohol too, but I know since it is a rage among the young women now. The drink reminds of our BM #75 meet when I carried some vodka for coloring the fondant flowers. Some of the friends asked me why I had got just 10 ml? Everyone was in a naughty mood , but unfortunately we had only 10 ml.

Coming back to this Virgin Mojito, it is normally made in a strong glass..well I made it in glass pitcher which has a sturdy bottom. One needs to muddle the fresh mint leaves with sugar. Press the muddler and twist a couple of times so that the mint juice is released. As soon as you get the aroma of the leaves, you can add lime juice and simple syrup. Here I used a store bought Mint flavored Mojito syrup. You could use Monin or any other brand. The mint syrup is not necessary, and can be substituted with sugar syrup but these syrups make the drink more flavorful .Now is the time to add crushed ice and then top with club soda and a bit of Sprite.

One can make many variations in this Mojito, I shall post the other versions soon. For now let me give you the recipe for this one.
