This is one alphabet that I really had to work on, finally I decided on a Whole Wheat cake. Now I am giving you two W’s so I am being fair , right ? Seriously I did have the option of Welish Cakes, but the name here is misleading, these are more like cookies. So the final settlement was a Whole Wheat Carrot Cake with Walnuts. Now I have one more W. 🙂

The carrot cakes are very popular in Switzerland, where they are very common on birthday parties. These cakes are very popular in US also and they frost them with cream cheese. The carrot cake is also one of the most hit cakes in United Kingdom also.

Whatever the origin might be, I simply loved the cake. I have made a Carrot and Orange cake , but this time I made the cake with Delhi red carrots and added some walnuts. The cake turned out absolutely delicious , a flavour which was hard to resist. I did not frost the cake as we do not like to add those extra calories. I just dusted the cake with some icing sugar and garnished with dehydrated carrot roses.

 

Dehydrating the carrots was an interesting experience. I have a thick carrot sharpener and I just sharpened the carrot trying to get a real large carrot peel. I rolled it and placed it in a muffin mould. I made two of these flowers and then placed them in a slow oven for 3 hours. The result is these flowers. I just brushed the edges of the flowers with some edible glitter.

Whole Wheat Carrot Cake with Walnuts

Ingredients

2 cups whole wheat flour

1 tsp baking powder

1/3 tsp baking soda

Pinch salt

11/2 cups carrots, grated

11/4 cups sugar

11/2 cups curd

1/2 cup oil

1 tsp vanilla essence

1/4 cup milk

1/4 cup walnuts, coarsely chopped

 

Method

Preheat oven to 180 deg C for 10 minutes.

Sift flour, baking powder, baking soda and salt.

In another bowl add sugar, curd, oil, milk and vanilla essence.

Beat well till everything is well incorporated.

Mix in the dry sifted ingredients, carrots and walnuts.

Bake in a preheated oven for 35 – 40 minutes or till done.

Check with a skewer, if it comes out clean, the cake is done.
