Eggless Whole Wheat Coconut Cake is a vegan cake made with whole wheat flour , oil , coconut and coconut milk . The cake gets a super crunch from the nuts and seeds which are used for topping .
I am coming back to blogging after the September Mega Marathon . A lot has happened in these two months , which has changed my life drastically . We know life has its own ways of dealing us and we should accept what comes our way with grace , but it gets hard when you loose your mother .
I really do not know where to start , she was such a great inspiration for me , in all fields . Without her life is definitely going on , but the vacuum – it simply can’t be filled . She was a tower of strength and I miss her practically every minute . Very hard for me to express what I feel , though I feel grateful to God for making me spend one full day with her before she left us .
It was Mom’s 85 th Birthday and my nephew planned a surprise party for her , invited neighbors , her close friends and relatives . He made a Insta photo booth where they clicked pictures with everyone ! My sister in law baked more than 40 cakes as the return gift , which mom gave everyone . It was from that day that she didn’t sound very good to me , so I went to see her . While returning she gave me a cake . Yes this is that special cake ! The sole cake that was left from the cakes my bhabhi had baked . I still wonder how she managed to bake so many in two days !
I had come home and enjoyed the delicious cake , I clicked pictures for recording special memories , not knowing what was in future . And now when I decided to start blogging , I felt this is where I should begin , giving her a ode . Ode to my Mom , a strong , elegant lady whom I will always look upon . Hope she is happy wherever she is and blessing her children . God Bless her .

Eggless Whole Wheat Coconut Cake
11/2 cups whole wheat flour
3/4 tsp baking soda
1 tsp baking powder
1/2 cup toasted coconut
11/4 cup brown sugar
1 cup coconut milk
1/3 cup oil
1 tsp vanilla extract
1 tsp white vinegar
Nuts and seeds of your choice
Preheat the oven to 180 deg C .
Combine wheat flour , baking powder , baking soda and salt .
Sieve the mixture once .
Add in toasted coconut .
In another bowl , combine sugar and oil , blend once so that the sugar dissolves .
Add coconut milk and vanilla extract .
Now gradually start adding the flour mix making sure to form a lump free batter .
Pour the batter in a greased , lined baking tin .
Sprinkle nuts and seeds and bake the cake for 35-40 minutes or until a skewer comes out clean .
Do check the top of the cake after 25 minutes , if you feel the seeds are getting over roasted cover it with a foil .
